You can use binoculars or the sniper scope to mark Stone Eagles on your map, and then your objective is to shatter the statues with a well-placed shot.

Where To Find The Atlantic Wall Stone Eagles In Sniper Elite 5
The Atlantic Wall Mission features three Stone Eagles scattered around the map.
Following the same order as the one on the map above, here is how to get all Atlantic Wall Stone Eagles collectibles in the video game developed by Rebellion.
Stone Eagle #1: On A Chimney
The first Atlantic Wall Stone Eagle Dead-Eye Target collectible can be found on top of the building in the eastern part of the map, close to the Picked Some Violets Personal Letter.
The building is off the map, with the Stone Eagle sitting on a pillar on its roof or a chimney.
Stone Eagle #2: On A Bunker
The second Dead-Eye Target Stone Eagle in The Atlantic Wall can be found on top of the bunker just southeast of the dunes.
The bunker is indicated as a vantage point on the map, and you can get it early in the mission if you head toward the dunes first.
Stone Eagle #3: On A Hotel
The final Sniper Elite 5 Stone Eagle in Atlantic Wall is located on top of the hotel, directly north of the town church.
The hotel is the building with Nazi flags and a fountain in front of it.
The Stone Eagle on the roof can be seen from the church’s top or from the pathway leading up to the hotel.
